As a mom of five kids (make that six including my husband!), it seems like I am always getting home last minute and having to quickly put together dinner. Of course, while my kids wait, they are snacking away on anything and everything that is in my pantry – my teenagers especially. I want to share with you some secrets that I have learned that help encourage healthy eating including my favorite go to meal (hint: it’s NOT spaghetti or pizza!) that you can serve in 10 minutes or less.
My first trick is an easy one – ALWAYS have fresh fruit in a bowl on the counter. When your kids can see it and it’s easy to grab and eat, they reach for the fruit bowl first. I always have a bowl of apples, oranges, and bananas sitting on the counter. In the fridge, I keep washed berries stacked neatly in single serving containers so they can grab them and take them anywhere. I also like to keep string cheese, yogurt, and grapes close at hand when they are running in the house saying they are hungry.
My second trick was to join the Fresh 20. The concept is simple: twenty fresh ingredients makes five dinners for the week. This has completely changed how I eat because it has introduced me to a bunch of new foods and quick easy recipes. Make sure to check it out here!
Here’s a recipe courtesy of Melissa at the Fresh 20. I like to add grilled chicken. I usually make some ahead of time and freeze it so I can cook it quickly in the microwave.
Quinoa, orange & olive salad

- 2 cups cooked quinoa (you can also substitute brown rice or couscous)* see prep guide
- 2 cups mixed salad greens (spring mix or herb salad mix)
- 2 oranges or tangerines peeled and sliced into small bite size pieces
- 1⁄4 cup kalamata olives, roughly chopped
- 1⁄4 cup goat cheese, crumbled
- 1⁄8 medium red onion, cut into thin slices
- 2 Tablespoons balsamic vinegar
- 2 Tablespoons olive oil
- Pinch of salt & pepper
- In a medium salad bowl, combine quinoa, salad greens, oranges, olives, goat cheese and onion. In a small bowl, whisk to combine the balsamic vinegar, olive oil, and salt & pepper. Drizzle over the salad, toss gently.
