White Chocolate Raspberry Truffle No Bake Cheesecake
My stand mixer is still on the other side of the country, so I used my food processor with dough blade to combine the cream cheese, white chocolate pudding, and sugar for the White Chocolate Raspberry Truffle No Bake Cheesecake.
The recipe yield is a little higher than what you may need. I recommend purchasing enough Oreos to make a second crust if you see your pie plate is getting too full.
Whoops! Did you forget to pickup raspberry preserves? Yes, I’m guilty of overlooking this on the recipe card. Thankfully, frozen berries are a staple in my freezer so I was able to cook down a handful with 1/4 cup of granulated sugar for a quick syrup.
Not everyone enjoys fresh fruit on their cheesecake. If you are unsure, consider setting up a topping bar. Have cheesecake servings already plated and ready to top with their choice of fresh raspberries, fresh raspberry preserve, and homemade chocolate syrup. (My kids really loved “decorating” their own slice)
