Nutella Reese’s Peanut Butter Cupcakes Recipe
Makes 20-24 Cupcakes
Prep Time: 15 Minutes
Bake Time: 15-18 Minutes
Peanut Butter Cupcakes Ingredients:
¾ c creamy peanut butter
6 tbsp butter, softened
¼ c sugar
1 c brown sugar
3 eggs
2 c flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp vanilla
1 c sour cream
¼ c milk
Nutella Reese’s Frosting Ingredients:
¾ c Nutella
4 oz cream cheese, softened
¼ c butter, softened
3 c powdered sugar
¼ c unsweetened cocoa powder
3 tbsp milk
1 tsp vanilla
Reese’s Peanut Butter Cups (approx. 15)
How to make these mouth-watering Nutella Reese’s Peanut Butter Cupcakes:
1. Preheat oven to 350°. Line cupcake pans with cupcake liners.
2. Mix the peanut butter, butter, sugar, and brown sugar in a large bowl on medium speed, until well blended and fluffy.
3. Add the eggs, one at a time on low speed, until incorporated.
4. In a separate bowl mix the flour, baking powder, baking soda, and salt.
5. Add the milk, vanilla and cocoa powder to the peanut butter mixture. Add half of the flour mixture, and stir lightly with a spatula to incorporate before mixing.
6. Add remaining flour mixture, and mix on low until blended, being careful not to over mix.
7. Fill cupcake liners ¾ full, and bake for 15-18 minutes, or until a toothpick inserted in the middle comes out clean. Let cool on cooling rack while preparing the frosting.
8. In a medium bowl beat the Nutella, cream cheese, and butter until well blended.
9. Add the powdered sugar, cocoa powder, milk, and vanilla. Beat until well blended, and add milk or powdered sugar as needed until you have a thick creamy frosting.
10. Pipe frosting onto cooled cupcakes, and top with Reese’s Peanut Butter Cups cut in half.
11. Chop a few of the Reese’s Peanut Butter Cups into small pieces, and sprinkle onto the cupcakes.
