My Review:

We received a HUGE box of food with a Chicken Dish, Stuffed Peppers dish and a Vegetarian pasta dish.   I was so impressed by how well it was packed, labeled and kept cool.

My most favorite thing inside the box (besides the food) is the green silicone food prep board.  I have used it daily!  I love have a clean spot on my counter wherever I put my board down.  We even received a Hello Fresh apron- they must know how messy I am when I cook. 

Here are all the ingredients that came for Goat Cheese-Stuffed Chicken Roulades with Kale & Couscous Salad: Chicken Breast, Couscous, Sun-Dried Tomatoes, Tuscan Kale,Golden Raisins, Stock Concentrate, Sliced Almonds, Goat Cheese, White Wine Vinegar

Check out the recipe on HelloFresh.com  It is labeled as a Level 2 for cooking skills and takes about 40 minutes from preparation to completion.

We made Goat Cheese-Stuffed Chicken Roulades with Kale and Couscous Salad the first night.  Let me just say, I was NOT thrilled about this recipe at all.  I don’t like goat cheese or kale and my boys don’t normally eat couscous.   But, I jumped in, followed the recipe and was AMAZED at how delicious it was!  The Goat cheese didn’t have that “gamey” taste that I remembered.  In fact, it was more like cream cheese.  The sun-dried tomatoes added a little sweetness in the goat cheese stuffing mix.  

The couscous kale salad was not only easy and fun to make, but was delicious as well.  Have you ever massaged kale before?  I hadn’t either.  The instructions told us to take out the ribs and stems from the kale and slice into ribbons.  Then massage the kale leaves in your hands with Olive Oil, white vinegar and salt and pepper.  In about 2 minutes,  the kale actually softens and tastes wonderful in the salad.  

 

HF Goat Cheese stuffed Chicken

 After all the fuss about “I don’t like that,” the boys loved it also!  (when I say boys, I mean my hubby and 12 year-old son.)  They even asked for seconds!  The chicken was their favorite.  My son really dislikes spinach or anything that looks like it.  He really liked the Couscous Kale Salad.  The golden raisins and almonds added a sweetness and crunch that completed the whole dish! 

The next night we went for the pasta dish.  The boys- still being picky eaters, weren’t interested in it at all.  Until I came out with the finished product!

Burst Tomato & Squash Fusilli- with Sweet Bell Pepper & Parmesan has the following ingredients:  Fusilli, Grape Tomatoes, Thyme, Bell Pepper, Parmesan Cheese,Onion, Yellow Squash.  We did omit the Bell Peppers, even I don’t like them.  This recipe is considered a level 1 difficulty and takes about 30 minutes to prepare.  Go to HelloFresh.com to find the recipe.

 I LOVE pasta of any type!  The Fusilli recipe will be on our list of weekly meals to make.  I love that you can create a whole new dish just by using different vegetables.  We just planted a bunch of veggies in our garden.  Our Fusilli will be our newest favorite seasonal dish.  It doesn’t have a heavy sauce, it doesn’t even need one.  I might have added a little extra Parmesan cheese, but you can never have enough cheese!

 This recipe gets it’s amazing flavor from Parmesan, fresh thyme and caramelized red onion.  I didn’t add the whole red onion (you guessed it, the boys don’t like onions) but the ones I added really helped the flavor of the thyme and cheese really pop out!  

I had thought that the Goat Cheese-stuffed Chicken was my favorite, but after I tried the Fusilli, I had to change my vote.  The Fusilli is a fresh, easy dish to make that you can customize to your own family’s tastes.  I can’t wait to make it with those fresh veggies from our garden.

Please note: there was a third recipe creation in the box.  We chose not to make the Indian Stuffed Peppers with Curried beef because we don’t care for curry or peppers.  You can find the recipe on HelloFresh.com and make it for yourself.
