We are huge macaroni and cheese lovers in this house. It was the first meal I learned to cook on my own, and my kids cannot seem to get enough of it. I used to think of it as a side dish, but over the years I have learned that some foods should be eaten on their own. My new motto is “Mac-n-cheese IS a meal when you prepare it so well it is the only thing on your family’s plate they can’t get enough of!”

One of my favorite ways to eat mac-n-cheese for dinner is baked with kale and topped with bread crumbs. It is my ultimate comfort food! Simply Being Mommy had the same idea but she uses Spinach and adds bacon for even more flavor! Her Bacon and Spinach Mac and Cheese is so good you could serve it to dinner guests and not feel guilty about your easy dinner choice.
