The other day, I was craving something sweet. Well, my favorite flavor of all time is chocolate! I love the deep dark chocolate of Devil’s Food and I also love the flavor of Peppermint combined with it. That, my friends, was my inspiration for these Chocolate Peppermint Cupcake Delights! The more I thought about them, the more I wanted them. So…nothing to do but head to the kitchen and get baking!
These Chocolate Peppermint Cupcake Delights are not hard at all, but I promise they deliver an AMAZING flavor! They are the perfect “me-time” snack with a hot cup of coffee or cold glass of milk! Check them out below!
Chocolate Peppermint Cupcake Delights
Ingredients:
1 box Devil’s Food Cake Mix
1 cup shortening (I use Crisco)
2 sticks (1 cup) butter, room temperature
4 cups powered sugar
1 tsp. Vanilla extract
3/4 tsp. Peppermint extract
2 Tblsp. water
Candy Canes or peppermint candies
Minature Chocolate Chips
Instructions:
Preheat oven to 350 degrees.
Mix boxed cake mix according to instructions. Pour into greased muffin tins and bake.
Remove from oven and allow to sit 1-2 mins, then immediately remove to cooling rack (helps prevent sticking).
Allow to cool completely.
Frosting Instructions:
Add the shortening, room temperature butter, powered sugar, vanilla extract, peppermint extract, and water into mixing bowl.
Mix until smooth and creamy.
Pipe frosting onto the cupcakes using a Wilton 1M or Ateco 842 tip into an upward spiral and add into a decorative cupcake wrapper.
Then the fun begins! There are several ways you can do these!
With Mini Chocolate Chips and Peppermint crunchies and finish by adding a candy cane stick in the cupcake.
You can leave off the Mini Chocolate chips and add Peppermint crunchies and a little red sugar sprinkles.
Then again, you can even leave off the Mini Chocolate Chips and the Sugar flakes and go with only the Peppermint crunchies! Or, do like I did and make several combinations for even more fun!
Whether you add the extra toppings or not, the frosting has a hint of Peppermint so you still get the flavors!
