Strawberry Crunch Bars are the Perfect Summer Dessert!

Are you looking for the perfect Summer dessert? Well, we have just the thing! Made with fresh strawberries, these Strawberry Crunch Bars are a cooling and refreshing treat! This dessert is perfect for the family or a party and can be made ahead of time. It is especially great for after a meal or an afternoon treat!

Strawberry Crunch Bars

Along with being delicious, it is an easy recipe to make. So, if you love the sweet taste of strawberries and love cream cheese, this one is for you! You may also like our Pink Fluff recipe for a delightful change of Summer dessets!

Strawberry Crunch Bars Recipe

Prep Time: 15 mins
Cook Time: 20 mins

Ingredients

Strawberry Crunch Bars ingredients

1 pkg or approximately 20 Sugar Cookies
½ cup Sugar
6 tbsp Butter, melted
8 oz softened Cream Cheese
1 cup Heavy Cream
1 lb Fresh Strawberries

Instructions

Preheat oven to 325 degrees.

Spray a 9×13 baking dish with non-stick spray.

Strawberry Crunch Bars process

Using a food processor, crush one-half of the sugar cookies.

Add the melted butter and pulse until blended.

Press mixture into bottom of prepared pan.

Bake for approximately 20 minutes.

Set aside and allow to cool.

Wash, hull and slice strawberries.

Using a mixer or stand mixer, whip the heavy cream with sugar until peaks form.

Add in softened cream cheese and continue mixing until well blended.

Fold in the sliced strawberries.

Spread the mixture evenly on top of the cooled crust.

Crush the remaining half of sugar cookies in blender and sprinkle over the top of the mixture.

Pop into the freezer.

Allow to thaw 15-20 minutes before serving.

As an alternative to packaged sugar cookies, you can make your own or use Pillsbury ready-to-bake sugar cookies.,
